CHICKEN AND CORN SOUP
This recipe is so easy, you can make it quicker than you can drive to the local Chinese take away!!

1 Breast of Chicken
1 tin 440g creamed corn
1.5 C chicken stock (just cheat – use a stock cube and water!)

Shallots and fresh coriander to sprinkle on top – makes it look very professional.

Cook chicken then shred or chop.  Combine with corn and stock.  Sprinkle the shallots and coriander on top.
