Cauliflower Cakes
Shhh....don't tell them its health!

Crustless Quiche
Leftrovers never tasted so good!....


CAULIFLOWER CAKES
For the times you need a veggie fix!  Or an easy way to use up leftovers

500g cauliflower
¼ C flour
½ C parmasan cheese
3 eggs
Garlic and parsley – if you feel like it.

Cook cauliflower.  When cool, add flour, cheese and eggs.  
Spray a pan with oil, so we can keep the fat down.   Just fry the cakes and dig in!  

Other ideas:   Add some chopped bacon or ham before cooking the cakes.  Try dipping in sweet chilli sauce. 


CRUSTLESS QUICHE

This is for those nights you need to finish off the leftovers in the cupboard or just plain can't be bothering going for takeaway.

1 Zucchini, 1 Carrot, 1 Onion, 1 Potato
(or any other veggie in your cupboard or fridge!)
4 Eggs
1.5 C Milk
1/2 C SR Flour
1C Grated cheese

Oil pan. Grate all the veggies into a bowl. Add all the other ingredients except 1/2 C cheese. Mix and pour into pan and top with remaining cheese. Cook for approx 35 minutes.

In theory, the unused portion can be eaten the next day. But this is theory only, we've never had any leftover!
